Laudemio Extra-Virgin Olive Oil

The story

Santedame was acquired at the beginning of 1988. Top quality olives allow Ruffino to produce Laudemio, the ultimate concept of extra-virgin olive oil made in central Tuscany according to strict regulations. The project aims to promote Tuscan olive oil.

Winemaking notes

The olive groves belong to the Santedame estate in the Castellina in Chianti municipality, province of Siena, on high-lying hills with impoverished soils, at 310-400 metres above sea level. Hand and pole harvested, the olives are pressed within 24 hours of being picked. Continuous cycle extraction and light filtration within 12 hours.

Color

Acid green with intense lemon yellow highlights.

Aroma

Bold tomato leaf aromas, followed by a touch of artichoke and cardoon.

Tasting profile

Gentle and enveloping, full and opulenta t first. The finish acquires elegance with a long bitterish ending. Very subtle piquant touch to close.

Food pairings

Tartare and grilled meats, hearty vegetable and bean soups.

Did you know?

The area where the Santedame estate is located is known as the Golden Basin (“Conca d’Oro”) due to the distinctive conformation of the terrain and the exceptional quality of the wine and oil that is made here. The old Serelle monastery stands on a hill close to the villa. A short distance away, a fifteenth-century fresco by the school of Ghirlandaio can be found in an isolated chapel on the estate surrounded by woodland.
