The grapes are destemmed and cooled before being pressed gently. The fermentation takes place in temperature controlled stainless steel vats at 16°C for about 10 days. The wine is refined on fine lees for several months in steel containers at 8° using the batonnage technique.
Pinot Grigio was first produced at La Solatia in 2002, although research into international grapes in Tuscany started long before. The idea of ennobling the character with a refined touch in Ruffino style was achieved with this fine and versatile wine.
